Weekly shop and a tasty salad

Sunday is shopping day in our household which means getting our butts on bikes and heading to Aldi to load up the panniers while all the fresh stuff is still there. I did my meal planning based on The Super 6 as always and it was particularly good this week.

So we spent about €60 and we have our meat for the week and plenty for the freezer. I picked up a double pack of pork chops, a double pack of mince, a small ham fillet and a pack of chicken portions.

1 pack of the pork chops will become Asian Inspired Pork Chops, and the other pack is freezer bound.

1 pack of beef mince will be turned into Moroccan style meatballs with the other pack getting stashed in the freezer.

A small ham fillet will be done in the slow cooker – we’ll have some griddled with pineapple salsa and sweet potato fries and the rest will go back in the slow cooker with black eyed beans to make a tasty rice and bean dinner.

Chicken portions are what I’m really about today though; I took 1/3 of the pack and marinaded if for chicken kebabs for dinner. (recipe to follow)

The other 2/3 of the pack of chicken I beat between 2 pieces of clingfilm until flattened, seasoned with salt and pepper and griddled for 3-4 mins a side until golden and cooked through.IMG_1148

While they were resting and cooling my thoughts turned to lunch, I knew I wanted the 2 large pieces to go into the freezer for some chicken parm later in the week. And so we were left with 3 smallish pieces that met their chicken destiny in the form of:

Mexican(ish) chicken salad

You will need:IMG_1150

  • Some nice crunchy greens, I used a little gem and some baby spinach
  • A pepper, sliced
  • 1/2 red onion finely sliced
  • 1/2 tin red kidney beans, drained and rinsed
  • 1/2 cup frozen corn, thawed
  • Your cooked and cooled chicken, sliced

Bear with me here, while I suggest a weird dressing:

Mix the following until smooth:

  • 2 tbsp fat free greek yogurt
  • 1/2 tsp fajita seasoning
  • enough milk to make it pourable (approx 2tbsp)
  • a few dashes of hotsauce of your choice
  • and a squeeze of lime juice, which I forgot about in the photo

Build your salad:

Greens first, then pepper and onion, remember that you have some cherry tomatoes in the fridge and chuck them on, then kidney beans, corn and lastly your sliced chicken
