A Simple Indian Inspired Side

As promised, here is the recipes for Indian Style Roast Potatoes. First though let’s talk about spices. For one with a tiny kitchen I probably have way too many spices. I am basically a spice magpie and love buying something new to me and experimenting.

I cannot recommend highly enough that you go to an Asian store and have a good look at what you see around you. Don’t be afraid to ask what you would do with something, in my experience people are happy to help and explain!!

That being said there are a few spices in my life I cannot live without and recommend that you get your hands on some:

  • Cumin – Middle Eastern, Indian, Mexican, I basically use this in everything
  • Paprika/cayenne/chilli powder – feel the heat!!
  • Curry powder
  • Garam Masala – added at the end of curries it makes them sing, it’s a warm cinnamony blend of spices that I also use in odd places like a chilli to add depth
  • Baharah/ ras al hanout – the quick way to Middle Eastern flavour, use to rub lamb/chicken before grilling

So onto the recipe;

Indian Inspired Roast Potatoes

This recipe feeds 2 generously but if you want to make it for more just double everything and it will go to 6

Preheat you oven to 200c

You will need:

  • 2-3 potatoes, cubed – they need to be small enough so that they cook before the spices burn
  • 1 tsp chilli powder
  • 1 tsp garam masala
  • 1 tsp cumin
  • 1 tsp nigella seeds
  • 1 tsp sea salt
  • 1/2 tbsp olive oil
  • small bunch chives/1 scallion finely chopped

Get everything onto a tray and toss around with clean handsIMG_1083

Roast for approx 30 mins turning once until crisp and cooked through
