Breakfast (again)!

Life has been hectic these last few weeks, leaving me with not much time for blogging. We found a new place to live in Drumcondra. While I’m  pretty sure I’m going to get fat with all the nice places to eat around there, I’m really excited. Not least because my new kitchen will have an actual window!!!

So the last little while has been spent preparing for the move and realising how much stuff you have – why does one woman need 4 Christmas bundt cake pans I ask?! I have also realised that my love for preserving has left me with a glass container hoarding problem. My solution to problems like these has been to recycle clothes but keep the pans, priorities eh?

Sunday morning rolled around again very quickly and as I may have mentioned I do like a leisurely Sunday breakfast. We bought figs in M&S the other day, I love love love figs!!! Their plump texture, they look beautiful and they always make me feel like I’m eating something elegant and exotic, a real treat.

This particular batch was amazing and needed little to be done with them so I knew I wanted a recipe to let them shine this morning. Figs and ricotta is a classic for a reason but it being Sunday I wanted to make something a little more special. Enter “Ricotta Stuffed French Toast”, which is more of a serving suggestion than a recipe but here goes:

Ingredients:

  • Bread of your choice, I used 6 small slices of a spelt with seeds
  • Ricotta, as much as you need for spreading on your bread
  • 2 eggs
  • 1/3 cup milk
  • 1/2 tsp vanilla
  • 2 tsp sugar

 

In a shallow dish, large enough to fit your bread in whisk the eggs, milk, salt, vanilla and sugar

Generously spread half of your bread with ricotta and sandwich with the other half

Soak for 1 min each side in the egg mixture

Heat a small knob of butter on medium in a large pan and fry the bread for 3-4 mins each side until golden and cooked through

Top generously with the fruit of your choice, I used the aforementioned figs and some cherries

Drizzle a teaspoon of honey over and dive in with a pot of tea

Note: This method is also amazing with peanut butter inside and banana or berries on top. Mmm Mmm Mmm
