Sunday Morning Waffles

It’s my last day of a very pleasant week off work and I feel it’s only right to be somewhat decadent and when I feel like spoiling myself I reach for the waffle iron! I don’t know why but it always feels somewhat celebratory, maybe because it was a birthday present from my chap, one of those “I really want one but can’t justify buying it” items. One might argue that it was a present for himself, being as he is usually the benefactor of said waffles but it always makes me smile. I hope this post makes you smile too (or at least hungry).

So on to the waffles!!!

You will need:

  • 1 cup plain flour
  • 1tsp baking powder
  • 1/2 tst baking soda
  • 1/4 tsp salt
  • 1 cup buttermilk
  • 1 large egg, seperated
  • 2tbsp butter, melted

Makes approx 7 individual waffles

Heat your oven to 100c and put your waffle iron on to heat

Whisk together the 1st 4 ingredients and set aside

Whisk together the buttermilk and egg yolk, and whisk the egg white with an electric hand mixer until stiffIMG_0738

Whisk the buttermilk egg mixture into the dry ingredients IMG_0739

Fold in the egg whites (mix through gently with a spatula so as not to knock the air out) and then fold in the melted butterIMG_0740

Spray your waffle iron with cooking spray and put your batter on, I find a generous quarter cup measure each side to be perfect for mine, but it might depend on your waffle ironIMG_0742

Close the lid and set a timer so you don’t forget about them! My iron takes 5 mins usually but you may have to adjust the time to suit yours – you’ll know they’re done when there’s no more steam coming from the iron and when you open the iron it will come up cleanly with no sticking

Use this 5 mins wisely to clean as you go!!! (my mother would be so proud)IMG_0745

After the 5 mins you will have a vision of lovelinessIMG_0748

Remove them and put them on a baking tray in the oven to keep warm and start all over again

Use this next 5 minutes to prepare tasty things to go on the waffles

Hull and slice your strawberries and stir through 1 tsp icing sugar

Take about 1/2 cup 0% fat greek yogurt (I’m all about making healthy choices) and stir through 1tsp each vanilla extract and icing sugarIMG_0751

Set aside while you continue with your waffles

To serve the waffles, stack 2 each on a plate and generously pile with the strawberries Use a tea strainer or small sieve to dust some icing sugar on top just to make it look prettyIMG_0760
