Rainy Day Treats!

Some might say I have a baking addiction, some might say I have a baked goods addiction. Either way I have just got lashed on cycling home from work and feel I need to treat myself with a bake. That being said I have a wedding to attend in 4 weeks, and yes I have known about it for ages but I have suddenly decided I really should lose that half stone I intended to 6 months ago.

Now I don’t want to delude you or myself by insinuating that these are healthy treats, they most certainly are not! They are however, a good compromise for someone like me who cannot be trusted with a pack of cookies. The log can be frozen and you can bake off just a couple at a time. They’re a version of a pioneer woman recipe but the good news is as long as you get the general proportions right you can use whatever you have in your press.

You will need:IMG_0871

  • 225g room temp butter
  • 1 1/4 cups soft brown sugar
  • 1/4 cup caster sugar
  • 2 large eggs
  • 2 tsps vanilla
  • 2 tbsp peanut butter
  • 2 tbsp nutella (or it’s German supermarket equivalent)
  • 2 1/2 cups flour
  • 1 tsp bicarb
  • 1/2 cup oats – if not using these add an extra 1/4 cup flour
  • 1 cup tasty things you would like in a cookie, I used a mix of m&ms and chocolate chips
  • 1/2 cup finely chopped nuts (I used up all my ends so it was a mix of almonds, brasils and walnuts)
  • Note – it’s important to finely chop your nuts and tasty things here, so you can easily slice the log later
  1. In a mixing bowl whisk your flour, bicarb and a pinch of salt and set it aside
  2. In a stand mixer or with an electric mixer cream the butter and sugars for 2-3 mins
  3. Mix in the eggs, 1 at a time, then the vanilla
  4. Then add the nutella and peanut butter and mix, scrape down the sides of the bowl to make sure everything is well combined
  5. Add your flour mix and mix until everything is just combined
  6. Lastly add your oats and tasty mix ins and fold into the dough
  7. Lay out a large sheet of parchment and dump half the dough along the centreIMG_0873
  8. Roll it up into a log approx 4cm wide x 25 – 30cm longIMG_0875
  9. Put into the freezer for at least 30 mins or leave in there until you need a cookie!

When you’re ready to bake:

  1. Preheat oven to 180c
  2. Remove your log from the freezer and slice (less than 1cm wide)IMG_0878
  3. Put onto a parchment lined baking tray, leaving a good gap between because they spread IMG_0880 (1)
  4.  Put into the oven for 10-12 mins until golden and lament the fact that one always sticks to another no matter how far apart you thought you put themIMG_0887
  5. Let cool on the tray for 5 mins before removing them to a rack to coolIMG_0889

It is also worth noting that these cookies make ridiculous ice cream sandwiches, simply sandwich them together with your favourite ice cream (vanilla is my choice here) and stash in the freezer until you need a treat/have companyIMG_0928
