Chicken leftovers part 1: Chicken Fried Rice

As frequent visitors may have realised I am what they call frugal when it comes to my food shop. I have a pathological fear of throwing food out, that being said I also hate being mean with food. There is always a bountiful spread in my house, and as previously asserted will never buy a small chicken to roast.

But what to do with those chicken leftovers?

So generally after a roast chicken, the chap breaks down the rest of the chicken and leaves the meat in a covered container in the fridge for me. This is one of those things that makes me realise I have found the perfect man, it’s maybe unsettling how attractive I find this act. Sometimes I have immediate designs on it and other times it gets stashed in a bag in the freezer.

This week my chicken leftovers are destined to be another dinner and some tasty soup for lunch (and the freezer).

May I present Chicken Fried Rice:chickenfriedrice

A big steaming bowl of goodness which hardly requires a recipe but here’s mine anyway:

  • 1 cup brown rice, cooked earlier in the day/night before, according to it’s pack and left in the fridge
  • 1 pack stir fry vegetables
  • 1 – 2 cups leftover roast chicken, shredded
  • 1 bunch scallions, chopped
  • 5cm ginger, finely minced
  • 1 clove garlic, minced
  • 1 red chilli, sliced
  • 2 tsp sesame oil
  • 1/4 cup hoisin sauce
  • 1 tbsp soy sauce

To make:

  • Heat the sesame oil on high and stir fry the rice until starting to crisp and warmed through (this is my favourite little trick for making really fragrant toasty fried rice) remove to a large bowl and keep warm by the stove
  • Heat a small amount of vegetable oil and add the whites of the scallions (reserve the greens for scattering at the end), the ginger,garlic and chilli
  • Stir fry for a minute until fragrant but not burning and then add the vegetables
  • Stir fry these for 3-4 mins until almost cooked and add the hoisin and soy and stir until everything is combined and sticky and delicious
  • Add back in the rice and stir fry until it’s all combined and warmed through
  • Serve in a big bowl with the scallion greens scattered over

Sit back and enjoy that meal that only took 10 mins to make, oh and only 1 pan to wash too, life is good.
